Cocktail Recipe: Loquat Mojito

With our massive, ~16-foot loquat in the backyard that produces thousands of tart, yellow loquats every Spring, Shaun and I had to up with a creative use for them – Loquat Mojitos! Our obsession over Happy Hour and cocktails was able to be enjoyed in our own home. As a way to enjoy these winter fruits, and to take advantage of our mint plants in our cocktail garden, Shaun and I created the following Loquat Mojito cocktail recipe to try and avoid waste. It was delish!

Loquat Mojito

Ingredients

1 1/2 White Rum (We like Flor de CaƱa)
6 leaves of Mint
Soda Water
1 oz Fresh Lime Juice
3 De-seeded and Peeled Loquats
2 tsp sugar (or 1/4-1/2 oz of Simple Syrup to taste, and easier to dissolve in the drink)

Instructions

  1. Muddle the loquats, sugar, and lime juice.
  2. Slap the mint (to open it up) and put it into the drink. (Don’t do as we did by muddling it in the picture!)
  3. Add rum.
  4. Add ice cubes 2/3 of the way full.
  5. Stir.
  6. Top off with club soda.

Loquats often yield quite a bit so I recommend taking this opportunity to have a Spring Loquat party. Preparing the loquats and different spirits will give your guests a boozy, creative outlet.
